Cold Sesame Noodles for Unreasonable Heat

Why keptShanghai summer makes cooking with heat an act of self-harm. This is the counter-move, refined across two summers.
Final verdictGuests have asked for it in winter. Request denied; it is seasonal by decree.
METHOD
  1. Whisk sesame paste with the cold noodle water first — it seizes, panics, then relaxes into silk. Do not skip to the soy sauce early.
  2. Add soy, vinegar, sugar, garlic, peanut butter. Taste. It should be slightly too intense on its own; the noodles dilute it.
  3. Dress the cold noodles at the last minute. Cucumber, scallion, chili oil on top.
  4. Eat within ten minutes, ideally directly in front of the fan, which is where the recipe was developed.

WHAT CHANGED FROM THE ORIGINAL

The peanut butter is inauthentic and improves texture measurably. My grandmother would object to it and then, I suspect, quietly adopt it.

MISTAKES ON RECORD

Tahini, attempt one. Tahini is a lovely ingredient for a different civilization. It made the sauce bitter and thin and taught me to read labels in two languages.

INGREDIENTS
  • Fresh wheat noodles for two, cooked, shocked in ice water, drained hard
  • 3 tbsp Chinese sesame paste (zhi ma jiang, not tahini — see mistakes)
  • 1 tbsp peanut butter, smoothing agent, tell no one
  • 2 tbsp soy sauce
  • 1 tbsp black vinegar
  • 1 tsp sugar
  • 1 garlic clove, grated to paste
  • 3 tbsp cold noodle water, added slowly to loosen
  • Chili oil to personal honesty
  • 1 small cucumber in matchsticks, big handful of scallion

NOTES

Developed during the 2025 heat wave, when the apartment hit 34°C and the stove became a decorative object. The entire recipe can be executed without raising the kitchen's temperature by a single degree, which in July is the highest culinary virtue available.
